You have to love the cooler months, for me it is an opportunity to throw some ingredients together in an oven, roast and within the hour have dinner ready. Such an easy way to organise a meal after a day at work.
Here in Canberra we have had a few days of cooler weather and before summer really kicks in I took advantage and put together a dish of Roasted Organic Chicken Sausages and Vegetables. It is important to get good quality sausages, low in fat. The horrible supermarket sausages would be a disaster, leaving you with a very greasy dish.
Heat a roasting tin with a little olive oil, when hot put in the following ingredients:
Rosemary from the garden
A few garlic cloves in their skin, lightly crushed
Cracked black pepper
Drizzle of olive oil
Make sure your vegetables are cut small so they cook in the same time as the sausages.
Toss around to mix, then roast. During the last 20 minutes I added a tub of cherry tomatoes for a fresh flavour. Serve with a few steamed greens or salad leaves.
Really it cannot get any easier.
