Muesli Bars

After years of searching for a recipe for a not too sweet but tasty snack bar I came across the following recipe.  Not sure where, though I did find it recently, it was one of those recipes that I scrawled down in my notepad that I carry everywhere.  If it is yours please let me know and I will be happy to give you credit.  The recipe is easy to make, a super high GI food just perfect for a mid morning snack or breakfast on the run. 

Muesli Bars

1 x 397g condensed milk

250g rolled oats

75g dessicated coconut

100g dried cranberries

125g mixed seeds (pumplin/sunflower/sesame) 

125g natural unsalted peanuts  

Mix together the dry ingredients and add the warmed milk.   Spread mixture into a 30cm x 20cm baking tin, smoothing and pressing down well with the back of a spoon.  Bake for 1 hour in a slow 130c oven.  Leave to cool in the tin for 15 minutes, then remove and cut into desired size bars.

Another great idea is to bake it in a larger tin and break up as a crunchy granola for your morning yoghurt.  Reduce the cooking time but keep an eye on it so it does not burn. 

Feel free to substitute nuts and dried fruit to suit your taste, this recipe is quite forgiving - just don't overcook or it will go rock hard.
