The lovely L is visiting from Bristol, we were lucky enough to secure a night of her undivided attention as she buzzed through Canberrra on her way to the South Coast. While I wanted to cook her something yummy I did not want to spend hours in the kitchen. What better than a Red Prawn Curry which literally takes 15 minutes from start to table, there are some great preprepared curry pastes available for those times when you need to whip out a meal very quickly.
It was a Thursday, seafood was fresh at Belconnen markets so I picked up some lovely Qld fresh green prawns from the Fishmonger and a tub of hand made Red Curry Paste from the Food Lovers store at Belconnen Markets. This curry paste is made on site in the little kitchen they have at the back of the store, it is not as lurid red as some of the commercially made pastes but does pack a mighty hit of chilli.
After heating a little oil in a pan, added a good wallop of curry paste and cooked off for a couple of minutes. Added light coconut milk, some chopped carrot and beans and simmered until they were cooked to my liking - I do like them quite crunchy. In go the cleaned and shelled prawns which only take a minute or two until nice and pink. I did muck around a bit adding fish sauce and palm sugar to taste, and some coriander to top it off. Unfortunately, I had forgotten to buy lime leaves which would have made a nice addition. While this is cooking put on some rice and the result is a special dinner for a friend with lots of time left to chat over a bottle of wine.
We had a great catchup with the Lovely L who did not mind the visitor lurking in the bath tub!
