Last Friday's cheat meal, I was in need something crispy and tasty to go with a lovely glass of dry white wine. Using the fritter recipe collection from Gourmet Traveller for inspiration I looked in the bottom of my vegetable crisper to find a lone carrot, a lemon and spring onions.
First up peel your carrot and par boil. Grate the carrot and sharp cheddar cheese. Mix with grated lemon zest, chopped spring onion, fresh sage leaves, S&P and a small amount of plain flour to bind. Press firmly into small patties, if you can wait, chill for 30 minutes. I did not bother and they held together well when shallow frying. The quantities to taste but be sparing with the flour to avoid a gluggy mix.
Pan fry in olive oil and serve with crispy sage leaves and a lemon cheek. A squeeze of lemon cuts through the richness of the fritter and adds a fresh taste to the mix.
