I finally got around to using the can of Chipolte chillies in Adobo sauce that has been kicking around in my pantry for the last........months.
This is an easy recipe with the Chipolte chillies adding a true Mexican Flavour
Firstly blitz 3 or 4 chillies with sauce together with a half an onion and coriander. Slather over the steak and marinate while you get the rest of the meal prepared.
Then the guacamole. Feel free to use whatever recipe you like, this is the ingredients I used for this one. Smashed avocado, spring onions, finely chopped deseeded tomatoes, coriander, garlic & Mexican chilli powder, a dash of sweet chilli sauce, a little Greek yoghurt plus S&P to taste.
BBQ the steak and thinly slice.
All that is left is to assemble and eat. Warm the tacos, either soft or had and pile on the meat with guacamole, baby spinach and grated cheese. Delicious!
