You will find variations of this slice in many Australian kitchens, often the slice will be finished off with a ganache or chocolate icing. I actually prefer this plain version which is not as sweet and lets the coconut flavour come through.
This takes 10 minutes to mix and another 20 mins to cook after which you have a delicious addition to a lunchbox which can easily be done midweek while you are cooking dinner.
1 cup SR Flour
1 cup brown sugar
1/2 cup desiccated coconut
2T cocoa powder
125 g butter and add to the dry ingredients with one lightly beaten egg. Place the mixture in a 20 x 30cm slice tin and sprinkle with hundreds and thousands prior to baking.
