There are many recipes on the internet for this classic cake, I found this recipe on www.taste.com.au, tried it a couple of times and found it reliable and quick. With baking recipes, there is no winging it, ratios and quanties matter and as you are no doubt aware not all recipes on the internet are tested and work so when you find a basic recipe that works, it is a keeper.
Lemon & Blueberry Cake
3/4 cup caster sugar
3t grated lemon rind
1 1/2 cups self-raising flour
1/2 cup milk
1/4 lemon juice
100g blueberries (I used the whole punnet which was 125g)
Method: Preheat oven to 180c & grease and line a ring pan. Cream butter and sugar until pale and creamy. Beat in 2 eggs and lemon rind. Fold in SR flour, milk and lemon juice. Add half mixture to pan, scatter over the blueberries and add remainder of mixture. Bake for 45-50 mins, sit for 10 mins in pan before turning over and dust with icing sugar.
