Fritters must be the absolute best way of using up bits and pieces lurking in the bottom of your fridge hidden away in the veggie draw. After attending a great Zero Waste Workshop @ Cornersmith in Sydney with my sister a couple of weeks ago I am currently inspired to ensure that I waste as little as I can. Last week was super busy so I found myself throwing out veggies (far, far too gone to use) again this Saturday before I went shopping. I felt so bad, kinda like falling off the wagon. Speaking of falling off the wagon, I am 8 days into my dry July and feeling great except that the thought of a nice dinner out is not that appealing if you cannot accompany the meal with a glass of wine or two! This means I will save some money during the month which will be an added bonus.
Roasted Broccolini Fritters
Roast broccolini with olive oil, garlic, salt & pepper. This should take about 20 mins, leave to cool and chop in a chunky dice. Mix with shredded baby spinach, sliced spring onions, diced haloumi a couple of eggs and about 2 T of plain flour. You want a mixture that is not too runny or firm, you can see from the photo below the mix is quite loose. The fritters firm up when cooked.
Next time I will use a sharper more flavoursome cheese such as feta or cheddar as the flavour of the haloumi got a bit lost with the roasted broccolini. If you don't have baby spinach, add kale or rocket. This really is a quick and delicious meat fee meal.
